I met some pretty great people at a conference last weekend and have been checking out their food blogs. Olena at iFOODreal inspired me to make this cauliflower gratin. I knew my husband and I would love it. Garlic, cheese, cauliflower. Sold! I wasn’t so sure about the kids. Turns out they love anything covered in cheese too.
This side dish was a nice change from our usual steamed or roasted cauliflower. Change is good!
Cauliflower gratin
Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- ½ yellow onion, diced
- 1 clove garlic, minced or grated
- 1 tbsp flour
- pinch of salt
- 1½ cups chicken stock
- ¼ cup cream cheese
- ½ cup shredded cheese
- 1 head cauliflower, chopped.
for the topping
- ½ cup shredded cheese
- ¼ cup breadcrumbs
Instructions
- In an oven proof skillet, heat the olive oil and butter over medium.
- Add the diced onions and garlic and cook until the onions are softened.
- Add the flour and cook for 1-2 minutes. Season with salt.
- Pour the chicken stock in and stir to combine. Let the mixture thicken slightly and add the cream cheese and shredded cheese until melted.
- Place the cauliflower into the skillet and toss to combine.
- Cover the skillet and cook for 12 minutes over low.
- Set the oven to broil, sprinkle the top of the cauliflower with shredded cheese and breadcrumbs.
- Broil until cheese is melted and crumbs are toasted.
