Confession! I have never eaten at Panda Express. Please don’t judge, I live in a small town with only a handful of chain restaurants. Boo! I simply saw this post last week and fell in love at first sight with the noodles! That being said, now I’m on mission Panda Express chow mein whenever our paths may cross. I’ve done some research, a short 6 hour drive and I could make this happen!
We love eating in or taking out Chinese food. But there is something a little more special when you make it yourself. Especially when it has minimal ingredients and it’s so easy to make! We paired it with some shrimp wontons and sweet & sour pork. But this recipe makes so much you could add some chicken to the mix and call it a day!
- ¼ cup low sodium soy sauce
- 3 cloves garlic, grated
- 1 tablespoon brown sugar
- 2 teaspoons grated ginger
- ¼ teaspoon pepper
- 1 package (16oz) refrigerated chow mein noodles
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 3 stalks celery, thinly sliced
- 2 cups shredded cabbage
- In a bowl combine the soy sauce, garlic, brown sugar, ginger and pepper. Set aside.
- Cook noodles in boiling water for 1 minute. Drain and set aside.
- In a large wok or frying pan heat the oil and add the onions and celery. Cook for a few minutes until soft and add in the cabbage. Cook another minute.
- Add the noodles and pour in the soy mixture. Toss to combine.
I also added a splash of water in with the soy mixture as the noodles had dried out a bit while sitting.
