And we’re off! Another camping trip planned this weekend. So much to pack (food) and so little time! First things first though, I had to set my PVR because I heard an exciting announcement last night. The Kardashians are back on this weekend! I dislike myself for loving this show so much. It has drawn me in and I can’t wait to see what this oddly fascinating and horrible show has in store this season! Clearly I need to get out more. Moving on…
It’s been way too hot to even think about turning the oven on so I went with a trifle for the weekend. The only part that requires a little cooking is the lemon curd and it’s so worth it. I promise! Layers upon layers of cake, cream, tart lemon curd and sweet strawberries.
Kim, Khloe and Kourtney are going to have to wait. I’ve got sun to soak up and trifle to eat!
- 1 Angel food cake, cubed
- 2 lbs strawberries
- 3 tbsp sugar
- 2 cups heavy cream
- ½ cup powdered sugar
- Lemon Curd
- Sliced strawberries and whipped cream to garnish
- Cube the Angel food cake and set aside.
- Mash the strawberries with the sugar in a large bowl and let sit while you prepare the whipped cream.
- Whip the heavy cream with the powdered sugar.
- In a large trifle bowl place a small amount of whipped cream on the bottom. Follow with a layer of cake cubes, lemon curd and strawberries.
- Repeat this process until all the ingredients are used up.
- Top with whipped cream and sliced strawberries.
