I thought it was about time I brought some muffins to the office. I keep getting subtle hints from my coworkers. By subtle I mean straight up telling me I never bring baking anymore. Hint taken!
I whipped up some chocolate chip banana muffins and flavored them with coffee. It’s Friday today so we’ll all be happy as it is but adding some muffins to the mix won’t hurt.
This recipe makes 18 muffins. Enough to give away and some to keep. It would be quite the scene around here if they all left the house.
Mocha banana chocolate chip muffins
Serves: 18 muffins
Ingredients
- ½ cup butter, softened
- ½ cup applesauce
- 1 cup + 2 tbsp sugar
- 3 ripe bananas, mashed
- 1 egg
- 1 tsp vanilla
- 1 tbsp instant coffee dissolved in a splash of water
- 2¼ cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 degrees. Line muffin tins with paper liners.
- In a large bowl combine the butter and sugar and beat until fluffy. Add the bananas, egg, vanilla and dissolved coffee. Stir until fully combined.
- Add the dry ingredients and stir to combine. Fold in the chocolate chips.
- Divide the batter evenly among the paper liners.
- Bake the muffins for 25 minutes.

Nothing beats a good banana and choc chip muffins.. but I have never tried one with the addition of mocha before! What a delicious flavour combination.. definitely need to make the recipe asap!
