Hello long weekend, we meet again! We’ve been having a great time hunting for and coloring eggs. The kids have been plotting ways to catch that sneaky Bunny too! Of course there’s been a lot of eating as well. We’ve got a brunch planned and this dish is perfect for holiday weekends with family. Since the weather is finally warming up I thought I’d go with a tropical Coconut version of my usual overnight French toast. I love this method of making breakfast. All prep is done ahead of time which is a major plus. Simply bake for an hour in the morning, sip your coffee and enjoy that day off!
Coconut Overnight French Toast
Ingredients
- 1 loaf French bread
- 8 eggs
- 1 cup milk
- 1 cup light or heavy cream
- 1 cup cream of coconut, found with the mixed drinks at the store
- 1 tsp vanilla
- 1 tsp coconut extract
- ¾ cup sugar
- ½ cup flaked coconut
Instructions
- Tear or cut a loaf of French bread in large pieces. Place them all in a 9x13 casserole dish that has been sprayed or buttered.
- Crack the eggs in a large bowl and whisk. Add remaining ingredients and pour over the bread pieces.
- Cover with foil and leave to sit over night in the fridge.
- In the morning preheat the oven to 350.
- Leave the foil on and bake for 30 minutes. Remove foil and bake for another 30 minutes.
