What have I done?? My kids are in activities four days a week during prime dinner time! Obviously I did not think this through. At least the weekends will be that much sweeter! I’ve been trying to come up with ways to keep my sanity without hitting the drive thru or making too many grilled cheese. Believe me, there will be grilled cheese. These little sliders are perfect. Most of the prep can be done the night before, making them ready in 25 minutes. Add in a salad or steamed veggies and dinner is served.
Meatball sliders
Serves: 12 sliders
Ingredients
- 1 dozen dinner rolls
- 1 lb lean ground beef
- ½ cup bread crumbs
- ½ cup milk
- salt, pepper, Italian seasoning to taste
- 2 tbsp olive oil
- ½ medium onion
- 1 jar marinara sauce (time saving!)
- shredded cheese. I used an Italian blend
Instructions
- To assemble the meatballs, combine the beef, bread crumbs, milk, salt and pepper and seasoning. Roll into 12 balls and set aside. (I did this step the night prior)
- Heat the olive oil in a large pan. Dice the onions and cook until just softened. Add the meatballs and cook until browned on both sides. About two minutes per side.
- Add the sauce, cover with a lid and simmer for 20 minutes.
- Split the rolls and place a meatball, some sauce and shredded cheese on the bottom half. Replace the top and serve.
