Wow this week flew by! I made some yummy banana bread to share with my coworkers, who I’m sure are also totally excited it’s the end of the week!
I’ve been running around getting ready for our quick trip out of town to pick up our new (to us) Motorhome in a much larger city. I’m very much dreading our 5am flight! The one thing that may just make this trip worth getting up for is the prospect of hitting up a few food trucks when we land. Living in a small community has it’s perks and I’m grateful, you can’t really beat a five minute commute! Being so small we’re really missing out on exciting things like food trucks! I’ve basically planned my entire trip around them so I sure hope we get to try some out. Major sad face if not!
- 4 ripe bananas
- 1 cup sugar
- ½ cup applesauce
- 1 tsp vanilla
- 2 eggs
- 1 tsp baking soda
- 1 tbsp baking powder
- 1 tsp salt
- 2 cups flour
- Preheat the oven to 350. Coat a mini loaf pan with cooking spray.
- In a large bowl mix the bananas and sugar until smooth. Add the applesauce, vanilla and eggs and mix until combined.
- Stir in the remaining dry ingredients and evenly distribute into the mini loaf pan.
- Bake for 30-35 minutes.
- Alternatively, this recipe will make one large loaf with a baking time of 50-60 minutes.
