It’s almost camping time again and I need something to bring along. It’s tradition! We go camping and I fill my face with high sugar, high fat snacks. Who am I to mess with tradition? Some other strong beliefs I have while we’re in the great outdoors involve sleeping in as much as possible, having too many Bailey’s and coffee and staying up late catching up on movies. Really roughing it! I haven’t always rolled this way. I’ve had my fair share in tents and loved it! Growing up we rode motorcycles through rain, snow!! and hail with the occasional Bee flying up and around our sleeves. Movie time just feels more my speed these days.
This weekend cupcakes are in order. I haven’t made one in quite some time and I feel a duty to right this wrong!
- 2 cups sugar
- 1-3/4 cups all-purpose flour
- ¾ cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup buttermilk
- 1 cup coffee
- ½ cup vegetable oil ( I used ¼ and ¼ applesauce)
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- ¼ cup butter, softened
- 1 (8oz) package cream cheese, at room temperature
- 3 oz unsweetened chocolate
- pinch of salt
- 1 tsp vanilla
- ¼ cup half and half
- 4 cups powdered sugar
- Preheat the oven to 350 degrees and line cupcake pans with paper liners.
- Stir together sugar, flour, cocoa powder, baking soda, baking powder and salt in large bowl. Add the eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for a few minutes.
- Divide batter evenly between the cupcake liners.
- Bake for 20 minutes or until a toothpick comes out clean. Let the cupcakes cool at least 10 minutes before transferring to cooling racks.
- Melt the chocolate in the microwave or double boiler and let it cool down in the fridge while you prepare the icing.
- Combine the cream cheese and butter. Beat until light and fluffy.
- Add the vanilla, chocolate and half and half. Mix until thoroughly combined.
- Add the powdered sugar a cup at a time beating well after each addition.
- Frost as desired.

How is the chocolate added into the frosting?? It’s not mentioned in the directions.

I did the recipe but when add the cup of coffe this went wrong i put in oven they never cooked ; ( thr icing is good thou

That’s disappointing! 🙁 It’s a fairly common recipe. Hopefully the icing made up for the cake.
