You know that moment when every single avocado in the bag is extremely ripe all at the same time? That’s when I decided to make a double batch of this Chocolate Peanut Butter Avocado Pudding.
It couldn’t really get any easier. All you need is a blender or food processor and 6 ingredients. Just toss it all in and blend away!
I added chia seeds to mine because all the healthy people eat them. Good enough reason for me. Plus they gel and help to thicken the pudding. The little bits you see on top are cacao nibs. I have a huge bag of them so I’m adding those to everything!
Hard to believe there is no added sugar in this recipe! Only a couple tablespoons of maple syrup. Go ahead and use a light colored honey or agave if that’s what you’ve got.
- 1 ripe avocado, pitted and peeled
- 3 tbsp unsweetened cacao powder
- 2 tbsp. pure maple syrup
- 1 tbsp peanut butter powder, such as PB2
- 1 tbsp chia seeds
- 6-7 tbsp almond milk
- Toppings: Banana, raspberries, cacao nibs
- Place all ingredients in a blender or food processor. Blend until smooth, scraping down the sides as necessary. Refrigerate at least an hour before serving. Top as you like with fruit, nuts, seeds, cacao nibs.
