Normally I wouldn’t shy away from noodles but I left them out and made Spaghetti Squash Chow Mein instead. I couldn’t be bothered to run to the store or boil anything in this little heat wave we’re having! The microwave did its thing while I took care of the little bit of prep involved.
This easy recipe comes together in about 20 minutes and can be customized by adding chicken, shrimp or whatever else you may have in the fridge needing to be used up.
Spaghetti Squash Chow Mein

Ingredients
- 1 spaghetti squash
- 2 tbsp vegetable oil
- 1 medium onion, sliced thin
- 2 garlic cloves, finely grated
- ½ bag coleslaw veggie mix, about 7oz
- 1 bag of bean sprouts
- 2 tbsp hoisin sauce
- 3 tbsp soy sauce
Instructions
- Split the spaghetti squash in half and scrape out the seeds. Microwave cut side down in a dish with ¼ cup of water loosely covered with plastic wrap for 12 minutes.
- In a large wok, heat the oil and stir fry the onions until softened. Add the garlic, coleslaw mix and bean spouts. Using a fork, lightly shred the squash and add it to the wok.
- Stir in the hoisin and soy sauce. Adjust the sauces as desired and serve.
