This One Pan Balsamic Chicken has got to be the easiest meal I’ve made in quite some time. One pan, 5 ingredients and no sink full of dishes to deal with. As a major bonus, dinner can be on the table in less than 20 minutes! It’s the perfect lunch or dinner when you find yourself in a time crunch. Which seems to be more and more these days. Sometimes a rushed dinner can mean skipping on the healthy parts but not in this case. I feel good serving three different vegetables in one meal.
One pan balsamic chicken can also be cooked up and used as lunch prep for the week. Get those handy single serve containers ready to grab and go in the morning. Serve over rice or noodles, chop and mix into a green salad or create a trendy bowl with quinoa and kale.

- 3 boneless skinless chicken breasts
- 1 bunch asparagus, trimmed
- 2 handfuls green beans, trimmed
- ½ cup grape tomatoes, sliced in half
- ¼ – ½ cup Litehouse Organic Balsamic Vinaigrette Dressing
- Olive oil, salt and pepper
- In a large pan, heat 1-2 tbsp of olive oil over medium heat.
- Season the chicken with salt and pepper and place in the pan, cooking on one side for five minutes.
- Flip the chicken and add the asparagus and green beans. Cook another five minutes or until the chicken is cooked through and vegetables are tender.
- Pour the dressing over the chicken and vegetables, tossing around the asparagus and green beans to coat.
- Add the tomatoes and serve.
