Some Pina Colada recipes call for all liquids which can be shaken or stirred but I prefer the type that makes me feel like I’m on a tropical vacation, slushy and smooth! I may not be pool or beach side but I can sure pretend with a blended pina colada in hand!
I love this drink with the creamy coconut milk and frozen pineapple chunks blended in. You just toss it all together really quick and it takes no time at all to blend up. If you don’t have a blender you can use a food processor instead.
Throw all the usual suspects in the blender and let it go until the ice and frozen pineapple is smooth.
Top with a cute umbrella and hit the patio!
Now what to do with all this left over coconut milk…
- 1 part coconut flavored rum
- 1 part canned coconut milk
- 3 parts pineapple juice
- ½ cup frozen pineapple chunks
- ½ cup ice
- Place all ingredients in a blender or food processor. Blend until smooth and pour into a glass.
If you like a sweeter pina colada you can add some cream of coconut found in the beverage isle near the drink mixes.
