The kids and I took advantage of our day off and made mint marshmallows. They loved watching the mixture grow and grow into a white puffy cloud! These are kid friendly, unlike the Bailey’s marshmallows I made a few weeks ago….

Cooking with Campbell’s sure isn’t a stretch in our house. We buy it by the case load! You know that happy dance moment, 5.99 case lot sale. Score! Growing up we certainly had a number of recipes using Campbell’s soup. I’m sure pork chops in mushroom soup rings a bell with everyone. When the boys were away my mom and I would make a simple noodle casserole using the cream of chicken soup. Delish!…
Gingerbread latte
I made my husband throw out the Halloween candy. I couldn’t do it myself and regretted my decision almost immediately. I had him throw it in the big outside bin. The one I can’t reach into out of desperation. It’s that bad guys! I’m not even a chocolate bar person and I lost count of how many I ate in one sitting. I knew it might be time to get rid of them when I couldn’t see past the wrapper layer in the kitchen garbage.
I have noted the weight of a peanut butter cup and will check back next year. I’m 99% sure they get smaller every year. This doesn’t excuse the full bag of peanut butter cups I put away with little help from the family….

This is one of those dinners I make when all the stars align and I happen to have cooked beef, sausage, ricotta and a bunch of cheese just hanging out in the fridge all at once. I like those nights….
