I feel like Easter snuck right up on me. Didn’t we just finish up with all those Valentine chocolates? Now everything heart shaped will be egg shaped. Those chocolate peanut butter cups for instance. Always available in the latest holiday theme. And yes, I buy one every time….
Coconut Curry Chicken
I’m off this weekend on a solo trip. I’ll be at a styling and photography workshop where I’ll be cooking, eating and photographing for two whole days. I don’t actually like the thought of leaving my house on Friday nights. We have a perfect little routine where we grab pizza, rent a movie and relax in our comfiest pj’s. This time I’ll be flying in quite late, settling into my hotel and not sleeping well. The first night at a hotel is the worst for me! Do you also hear weird noises all night and clock watch hourly so you don’t sleep in? Better set both cell phone and iPod wake up alarms while I’m at it. Paranoid!
After a week of making dinners I’m ready to search out some good restaurants in the area. This is always one of the highlights of my trip! I noticed there’s a breakfast buffet at my hotel every morning. Definitely a good start to the day….
Feed it Forward
I’m happy to spread the word about the #FeedItForward campaign. Maple Leaf is giving 10,000 families across Canada $100 in free groceries, totalling nearly $100,000 in free groceries across our country! Right now it’s an uncertain and challenging time for many individuals, families and not-for-profit organizations. Being part of this campaign, I was able to donate a gift card to one of our local societies that supports close to 1000 community members monthly. It’s one we frequent throughout the year. Whether it’s a personal drop off with my kids after we’ve added extra groceries to our cart or part of a corporate donation. It’s a nice feeling when we give back to a community that’s always been so good to us. …
Pan Roasted Honey Garlic Chicken
I don’t know if it’s the extra sunshine or the fact that I have 50% less school lunches to make this month (hello Spring break!) but I definitely feel my over all mood improving. Usually by mid week I’m about ready to throw in the towel and hit a drive-thru but I’m still going strong with the meals planned for the week.
Tonight I made pan roasted honey garlic chicken for dinner. It’s super moist, made the house smell amazing and it’s easy enough for weeknights….
