Pumpkin blondies finish up the remaining pumpkin puree I had calling my name from the fridge. This recipe makes a nice big pan so you can eat some, give some away or freeze them for later.
This is the third recipe I’ve gotten from one large can of pumpkin. First the pumpkin cinnamon loaves, then the pumpkin cheesecake brownies and now these pumpkin blondies. I’m having a hard time choosing which one is my favorite, though I am leaning towards the cheesecake brownies. Only because they’re like having two desserts in one. I think it’s entirely possible I fell into a chocolate coma with this one. I made this trifle for Litehouse awhile back and I totally forgot to post the recipe here! I can’t even believe it because this chocolate covered strawberry brownie trifle is out of this world! Going into creating this one I had a feeling it would be pretty good. Brownies that soak in a bit so some pieces taste more like cake, chocolate mousse, vanilla mousse, fresh strawberries, plus a homemade strawberry sauce all topped with whipped cream and chocolate shavings. It is hands down my favorite dessert in a long time. We gave some away but mostly my husband I just ate this over a weekend with no guilt whatsoever. I’d do it again in a heart beat!…
