When I see eggnog in stores I instantly think about our favorite movie, Christmas Vacation! Those moose mugs and hilarious scenes make me laugh every year! So much that I had to buy a few of my own while on a weekend getaway.

It’s been a long time since I’ve posted a recipe! I barely remembered my login and password but I’m getting back into the groove slowly. Super slowly… I only took one picture of the caramel apple cheesecake bars. That’s how rusty I’m feeling. I’m sure I’ll bounce right back once we hit fall routine. For now I’m trying to soak in all the summer sun and outdoor activities. I don’t even want to think about what’s around the corner weather wise. Long live flip flops!…
Nanaimo bars have got to be my all time favorite bar dessert so why not make a Nanaimo bar cheesecake? I’ve been thinking about it for a long time but always figured it would be a daunting task. Turns out the cake came together pretty easily! A chocolate and graham crust with the addition of flaked coconut and pecans, a cheesecake filling with custard powder and ganache topping. I love cheesecakes with a topping of some sort, that way if it happens to crack when baking, no big deal!…
Since we’ve gone from snow last week to sunburn and now back to fall-like temperatures, I’m going pumpkin this Friday! Plus I still have an absurd amount of canned pumpkin in the pantry. I don’t really need an excuse for these pumpkin cheesecake bars though. They’re so easy, why not make them in May? …
