It’s the first day of Spring break! Normally this would be exciting but there’s nothing really new here since we just returned from our Winter getaway. I’m working through the two week break so we have daycare and sports camp to keep the kids busy. Last night all I heard was excitement coming from the bedroom. “I can’t wait to go to sports camp!” We arrived this morning to find a classmate in the group. A familiar face was a sigh of relief for both of us….

Here I am, back from the all inclusive week in Mexico!
What a great trip it was. We decided to keep the whole thing a secret from the kids until we were heading to the airport. It was quite the scene when they found out. First let me rewind a bit. Back in February it was my Son’s birthday. For his gift, we all flew to Vancouver to see the monster trucks. We had a fabulous weekend there touring around, shopping, playing in the hotel pool and the main event was crazy! It was a first for all four of us so we were so excited by all the trucks flying around in the air and flipping on their tops.

Pea soup with sharp cheddar dumplings
Last week I was thrilled to find the winter issue of Ricardo in my mailbox. It’s always nice to find something other than the gas bill! I immediately flipped through it folding most of the corners down. Books do not stay pretty at my house. There are notes, scribbles and coffee stains most likely from when I’ve been interrupted by the kids requesting I open their cheese string.
There is a section of warming winter soups I want to cook through before we really get to BBQ season. At this point though, I would gladly leave the soups, chili’s and stews in favor of burgers, chicken and the occasional hot dog. I’m already picturing the patio set up and pasta salad on the side of my favorite bbq chicken. Come on Summer!…

Confession: I tried Lentils for the first time 5 months ago at a food bloggers conference I attended.
It’s not really my fault though. I come from a meat/potato/vegetable background. Nothing wrong with it, we fall back to that routine in our house quite often.
