Here is the latest salad in my “5 weeks until Spring break, stop eating cookies” saga. I’ll tell you, five years ago it was MUCH easier to lose weight. Why must I measure and fight for every ounce now?! Regardless, this is no sad salad. There’s lots of texture and flavor in this kale salad with feta, pecans and cranberries….
Charred Caesar Salad
My husband and I have this lovely arrangement where I make dinner and he does the dishes. It works out well because cleaning is not my favourite and he’s not too interested in planning the nightly meals. Little did he know going into this contract that I, like my mom, use an awful amount of dishes, utensils and tools while cooking. We also tend to cook way too much often resulting in a load of clean up. Sorry!…
Sweet Potato Stacks
Sweet potatoes, or is that yam? The store sign says yam, restaurants say sweet potato and I’m too lazy to do the research on google! Either way these sweet potato stacks and/or yam stacks are an easy side for dinner.
I have some rosemary growing in the garden this year so I’ve been looking for ways to incorporate more herbs in our meals. A quick chop and toss and these are ready to hit the oven and how convenient that they all fit in a muffin tray!…
Crispy Roasted Potatoes
The russet. A staple in my house for so many reasons. Number one being the perfect French fry! Growing up the russet potato reigned supreme in our family too. I remember my job was always to go grab four potatoes from downstairs in our cold storage room. Whether it was for hash browns, mashed potatoes or on those rare occasions, scalloped. It’s no wonder you see huge bags of russets at the grocery store. They’re so versatile. I can’t even believe how many different dishes you can make from a russet. If it was up to my kids we would have homemade fries or potato wedges with every meal. Not a bad request when you can easily bake them instead of frying….
